Cultivated yerba mate produced by the traditional process, with a characteristic coarser grind. The product goes through roasting, in which it acquires the characteristic taste and smell of toast. The light roasting accentuates acidity and aroma, with a mild taste. The medium roast is the balance point between acidity, aroma and bitterness. Finally, the dark roast forms a more acidic, more bitter and less full-bodied tea.
